Pumpkin Soup

There's something amazingly comforting on a chilly night about a hot bowl of soup!! I love soups of all kinds and am always excited when fall rolls around so I can start making them! I spent all week thinking about pumpkin soup and came up with a really wonderful recipe! PUMPKIN SOUP 6 slices maple-smoked bacon, diced 1 medium yellow onion, diced 1 T. minced garlic 4 cups chicken broth 32 oz. canned pumpkin puree (NOT pie filling mix) 1 cup heavy whipping cream 2 potatoes, peeled, diced, and boiled just until fork-tender Salt and pepper, to taste In a large pot, saute the bacon, onion, and garlic until tender and caramelized.  You may need to add a little olive oil to this.  Add the chicken broth, bring to a boil, and simmer for about 5 minutes.  Add the pumpkin puree and stir until blended.  Simmer, uncovered, for 10-15 minutes, stirring occasionally.  Just before serving, stir in the potatoes and cream.  Bring to temperature.  Season to taste.   Serves 4. Argentinian Carrots...a fabulous side dish!

Here we are at the end of summer...again...and getting ready for all those Labor Day parties and bar-be-ques!  Are you tired of potato salad, baked beans, potato chips...or whatever that same old side dish is that you've made 50 times this summer and you just can't bear to have it one more time?? Well, if you are (or even if you aren't), I've got a super-yummy, healthy, and easy side dish that will light up your party or bar-be-que and leave people asking how you came up with it! We had dinner many years ago at an Argentinian restaurant and they served this dish as a free appetizer while you were waiting for your dinner to arrive--I was hooked!!  I raced home from the restaurant and began experimenting to re-create this dish so we could have it whenever we wanted.  My husband taste-tested all the trial runs and we both agreed that this was the one. Our good friends, Roy and Brenda Artz, came to visit us this week and during our conversation one day, Brenda looked at me, and out of nowhere reminded me that I hadn't done any blogging since Christmas!!  I realized she was absolutely right...and that I have very little excuse.  I know that I've been meaning to do it...and I've told myself to sit down on numerous occasions and get it done, but somehow it just hasn't happened.   My biggest excuse is that we've been renovating our house this year and most of the time I've been covered in construction dust and haven't had time to hardly breathe, much less sit down and write about recipes (although I have been still actively creating them!).   So, Brenda, thanks for the reminder...and this one's for you!  Wish I'd had time to get it baked while you guys were here....
