S'mores Icebox Cake!

Many people think of S'mores as soon as summer is mentioned!  I like to indulge in s'mores once the weather has cooled off and fall has arrived--mostly because I don't like sitting around a roaring campfire when it's so hot and humid!  

But, that doesn't mean that I don't identify with the yummy, sticky, gooey-ness of a wonderful s'more!  I think the best way to enjoy a s'more during the blazing heat of summer is in an icebox cake!  I made one recently and it was s'more-licious!!




Icebox cakes are fabulous for the heat of summer because they don't require any baking, so you won't need to heat up your house with the oven.  It takes a bit of time to get all the components together and layered, but then, you just let it sit overnight in your refrigerator and you're ready to dig in...YUM!

First, you have to get all the components prepared.  The first thing you'll make is a chocolate ganache (which I could drink all day long and bathe in at night :)


Then, you'll need to toast some marshmallows.  I used a kitchen torch, which was quick and easy and I even got a few "burnt" ones, which is the way I like my marshmallows for s'mores.

You'll also need to make a marshmallow fluff filling.  And, once you've made it, you'll add most of the toasted marshmallows to it.

Then, the final component is a basic whipped cream that will be on the top of the cake.

Now, it's time to layer it all up!

Place some GF chocolate sandwich cookies, with the cream filling removed, on the bottom of your 13X9 pan.

Then, add a layer of the marshmallow filling.

Top with some chocolate ganache.

Next, I used some homemade GF graham crackers to add that lovely graham flavor that you want in a s'more.  You can use store-bought GF graham crackers, or you can skip it all together and just use more chocolate cookies.

Repeat the layers till you get to the top, which will be a cookie or cracker layer.

Then, top with the whipped cream.

And add some reserved toasted marshmallows and chocolate chunks for garnish.

Voila!  An ooey, gooey, sticky, yummy s'more without having to singe your eyebrows or smell like campfire smoke!

I hope you enjoy it as much as my young friend, Nora Wight, did!!  I totally forgot to take a picture of a serving on a plate and, before I knew it, it was almost gone!  Nora helped me out by grabbing the pan and letting me snap a picture of her with it...thanks, Nora!

Here's the recipe:

S'mores Icebox Cake

You will need: at least 36 GF chocolate sandwich cookies plus about 10-12 GF graham crackers.

For the chocolate ganache:
Heat 1 cup of heavy cream, but do not boil.  Add 1 tsp. vanilla and 1 12 oz. bag of semi-sweet chocolate chips.  Stir until smooth.

For the filling:
Whip 2 cups of heavy cream until peaks form.  Carefully fold in 1 pound of marshmallow fluff. 

Toasted marshmallows:
 Toast a 10 oz bag of miniature marshmallows with a kitchen torch until brown.  Reserve 1 cup for garnish.  Fold the rest into the above filling.

For the topping layer:
Beat 1 cup of heavy cream with 1/3 cup of sugar and 1/2 tsp of vanilla until peaks form.

To assemble:

Place layer of cookies on bottom of 13X9 pan.  Layer with filling and ganache.  Place a layer of GF graham crackers (or more cookies) on top of ganache.  Repeat layers, ending with cookies or crackers.  Top with whipped cream.  
Place in refrigerator overnight.  Before serving, garnish with reserved marshmallows and chocolate chunks or chips.

Serves about 16, depending on serving size.
