Pumpkin Soup
There's something amazingly comforting on a chilly night about a hot bowl of soup!! I love soups of all kinds and am always excited when fall rolls around so I can start making them!
I spent all week thinking about pumpkin soup and came up with a really wonderful recipe!
PUMPKIN SOUP
6 slices maple-smoked bacon, diced
1 medium yellow onion, diced
1 T. minced garlic
4 cups chicken broth
32 oz. canned pumpkin puree (NOT pie filling mix)
1 cup heavy whipping cream
2 potatoes, peeled, diced, and boiled just until fork-tender
Salt and pepper, to taste
In a large pot, saute the bacon, onion, and garlic until tender and caramelized. You may need to add a little olive oil to this. Add the chicken broth, bring to a boil, and simmer for about 5 minutes. Add the pumpkin puree and stir until blended. Simmer, uncovered, for 10-15 minutes, stirring occasionally. Just before serving, stir in the potatoes and cream. Bring to temperature. Season to taste. Serves 4.
My husband and I greatly enjoyed our creamy, bacony, yummy pumpkin soup on a blustery Halloween night with big slices of bread slathered in butter! Oh, yeah!!
